Bocuse speaks out

The legendary chef Paul Bocuse has spoken out against excessive winespeak in restaurants. According to him, the only permissible question is whether you enjoyed the wine and food.
The French cooking legend, who is almost 84 years old, owns the Auberge du Pont de Collonges restaurant close to Lyon, was speaking in an interview with French newspaper Le Figaro. He says one should beware against talking too much about either food or wine in restaurants, avoiding lengthy descriptions of the food or wine, he says these are superfluous. He says the only permissible question is whether the guest enjoyed the wine, and found it to be good, all other discussions should be scrapped. (WF)
