Tuscany

Separate DOC for Vin Santo in Tuscany in Italy. The zone is identical with that fort he DOCG region Vino Nobile di Montepulciano. The wine is made from any mixture of Malvasia Bianca, Grechetto Bianco (Pulcinculo) and Trebbiano Toscano (70-100%), as well as optionally from other permitted white varieties (up to 30%). The minimum alcohol content is 17% vol. Maturation in small barrels is prescribed, three minimum, and five years for a Riserva. The amber-coloured Occhio di Pernice is made from Sangiovese (50-100%) as well as from other permitted white varieties (up to 50%). The minimum alcohol content is 18% vol, the minimum maturation period before sale is eight years.
