Separate DOC for Vin Santo within the DOCG region Chianti in Tuscany in Italy. The zone includes precisely defined areas in the provinces of Arezzo, Florence, Pisa, Pistoia, Prato and Siena. The wine is made from Trebbiano Toscano and/or Malvasia del Chianti (70-100%), as well as optionally from other permitted white and red varieties (up to 30%). The minimum alcohol content is 15,5% vol, and 16% vol if on of the Chianti sub-zones is stated on the label. It is produced in the following variants: Secco, Abboccato, Amabile and Dolce. The wine is matured in small barrels, and may not be sold before the 1. November of the third year after the harvest (resp. of the fourth year for a Riserva). The white wine can vary from yellow straw through yellow gold to an intense amber colour, and has a characteristic aroma similar to that of Madeira. The rosé variant Occhio di Pernice contains a minimum of 50% of Sangiovese, and is made in Amabile and Dolce versions, the minimum alcohol content is 16,5% vol, minimum maturation is as fort he white variants, i.e. three resp four years.
