DOC for red and white wines located in the south of the wine-growing region of Tuscany in Italy. It is named after the abbey built in the Romanesque style in the commune of the same name, which is part of the Montalcino area. The small zone includes only the communal area. The vareietal-labelled wines Cabernet Sauvignon, Chardonnay, Merlot, Sauvignon, Pinot Grigio and Pinot Nero must contain a minimum of 85% of the stated variety, the remaining 15% may be made up of other permitted varieties of the same colour. Rosso (aalso made as a Novello) and Bianco are blends made up from any mixture of the red resp. white varieties permitted in the province of Siena. White Vin Santo is made from Trebbiano Toscano and/or Malvasia Bianca (70-100%), as well as optionally from other permitted white varieties (up to 30%). The rosé Vin Santo Occhio di Pernice is made from Sangiovese (50-70%), Malvasia Nera (30-50%), as well as optionally from other permitted red varieties (up to 30%). Both are made in Secco and Amabile versions, both have an alcohol content of 16% vol, and may be called Riserva if matured for four years.
