DOC for red, rosé and white wines in the wine-growing region of Apulia in Italy. The zone includes parts of the communes of Cellino San Marco, San Donaci and San Pancrazio Salentino in the province of Brindisi, as well as parts of the communes of Guagnano, Salice Salentino and Veglie in the province of Lecce, in the centre of the Salento peninsula. Varietal-labelled Pinot Bianco (also made as a Spumante), Aleatico Dolce and Aleatico Liquoroso Dolce must contain a minimum of 85% of the stated variety. The two last-named wines may be called a Riserva if they have been matured for two years. Dry Bianco is made from Chardonnay (70-100%) and optionally from other permitted white varieties (up to 30%). Dry Rosato (also made as a Spumante) and Rosso (also made as a Novello) are made from Negroamaro (80-100%), as well as optionally from Malvasia Nera di Brindisi and/or Malvasia Nera di Lecce (up to 20%). If matured for two years, and with a minimum alcohol content of 12,5% vol, the Rosso may be called a Riserva.
