DOC for a wide range of red, rosé and white wines on the island of Sicily, off the coast of Italy. The zone includes parts of the communes of Alia, Aliminusa, Caltavuturo, Castellana Sicula, Castronuovo di Sicilia, Cerda, Montemaggiore Belsito, Petralia Sottana, Polizzi Generosa, Sclafani Bagni (from whence the name) and Valledolmo in the province of Palermo, the communes of Vallelunga Pratameno and Villalba in the province of Caltanissetta, as well as the commune of Cammarata in the province of Agrigento. The varietal-labelled wines must contain a minimum of 85% of the stated variety, the remainder may be made up of other varieties of the same colour. The varietal wines are Ansonica or Inzolia, Cabernet Sauvignon, Catarratto, Chardonnay, Grecanico, Grillo, Merlot, Nero d´Avola or Calabrese, Nerello Mascalese, Perricone, Pinot Bianco, Pinot Nero, Sangiovese, Sauvignon and Syrah. The white wines are made in secco and dolce versions, and are also made as spumantes. The red wines are also made as novellos. If they have a minimum alcohol conten of 12% vol. and have been matured for two years, the red wines (except the Nerello Mascalese) may be called Riserva. The Bianco is made from Ansonica and/or Catarratto and/or Grecanico (50-100%), as well as optionally from other permitted white varieties (up to 50%). The Rosso is made from Nero d´Avola and/or Perricone (50-100%), as well as optionally from other permitted red varieties (up to 50%). The Rosato is made from Nerello Mascalese (50-100%), as well as optionally from other permitted red varieties (up to 50%).
