DOC for red and white wines in the wine-growing region of Tuscany in Italy. The zone includes parts of the three communes of Capannori, Lucca and Porcari in the province of Lucca. The varietal-labelled wines Merlot, Sangiovese (both also made as Riservas) and Vermentino must contain a minimum of 85% of the stated variety, the balance may be made up of other permitted varieties of the same colour. The dry Bianco is a blend made from Trebbiano Toscano (45-70%), any combination of Grechetto, Malvasia del Chianti and Vermentino (up to 45%), Chardonnay and/or Sauvignon (up to 30%), as well as from other permitted white varieties (up to 15%). The dry Rosso is a blend made from Sangiovese (45-70%), Canaiolo and/or Ciliegiolo (up to 30%), Merlot (up to 15%), as well as from other permitted red varieties (up to 15%, with a maximum of 5% each of Aleatico and Moscato). White Vin Santo is made from any combination of the local white wine varieties, and is available in Secco and Amabile styles, rosé Vin Santo Occhio di Pernice is made from any combination of the local red wine varieties, and is made in Dolce style. Both Vin Santo wines are matured in small barrels for three years.
