DOC for a wide range of red, rosé and white wines in the wine-growing region of Latium in Italy. The extensive zone includes 38 communes in the province of Viterbo, including the provincial capital. The varietal-labelled wines must consist of a minimum of 85% of the stated variety, the remaining 15% may be made up of permitted varieties of the same colour. The varietal wines are Canaiolo, Grechetto (synonym for Greco Bianco), Greghetto (synonym for Grechetto Rosso), Merlot, Moscatello (from Moscato Bianco), Moscatello Passito, Procanico (Trebbiano Toscano), Rossetto (Trebbiano Giallo), Sangiovese Rosato and Violone (Montepulciano). The Bianco is a blend of Procanico = Trebbiano Toscano (40-80%), Malvasia Toscana (up to 30%), as well as optionally of other permitted white varieties (up to 30%). Rosso (also made as a Novello) and Rosato are blends of Sangiovese (50-65%), Montepulciano (20-45%), as well as optionally of other permitted red varieties (up to 30%). Most of these wines are made in Secco and Amabile styles, and Frizzante versions are also available.
