DOC for dry red wines in the wine-growing region of Apulia in Italy. The zone includes the communes of Biccari, Lucera and Troia in the province of Foggia. The unusual name refers to a dialect expression for a special procedure that involves adding fresh grapes to an already fermenting must. The wine has an intense ruby colour, and is a blend made from Uva di Troia (35-60%), plus any mixture of Montepulciano, Malvasia Nera and Sangiovese (25-35%), as well as any mixture of Trebbiano Toscano, Malvasia del Chianti and Bombino Bianco (15-30%)
