Tuscany

DOC for white wine in the wine-growing region of Tuscany in Italy. Wine was produced here in Roman times. The zone includes 17 communes in the province of Pisa as well as the commune of Collesalvetti in the province of Livorno. The dry wine is made from Trebbiano Toscano (75-100%), as well as from other permitted white varieties (up to 25%). Vin Santo is made from the same varieties, albeit in raisin condition, and is made as either Secco or Amabile, it has an alcohol content of 16% vol and is matured in small barrels for three years. If aged for four years or more it may be called Riserva.
