The appellation is an enclave in the north of the AC Côtes du Roussillon-Villages#Côtes du Roussillon in the Roussillon wine-growing region in France. The total vineyard area is 1.700 hectares, most of the vineyards are terraced. They are located in the commune of Maury, from which the name is taken, as well as in parts of neighbouring communes. The wine produced is a sweet fortified vin doux naturel available in red, rosé, white and tawny (amber coloured) versions. It is made from Grenache Noir (minimum of 75%, used to be 50%), Macabéo (maximum of 10%, previously 15%), Carignan, Cinsaut Syrah and Listan Negra (maximum of 10%), as well as from Grenache Blanc, Muscat Blanc, Muscat d´Alexandrie and Tourbat, usually in a blend. The AC Maury Rancio applies to wines that are matured in oak barrels exposed to the sun. This gives them the typical rancio taste. Well-known producers include Mas Amiel, Domaine de la Coume du Roy, Cave Jean-Louis Lafage, Cave de Maury, Maurydoré and Domaine Pouderoux. Other well-known VDN appellations in the Roussillon region are Banyuls, Muscat de Rivesaltes and Rivesaltes.
