The appellation is located in the Languedoc wine-growing region in France. It was created in 1989, and applies to bottle-fermented sparkling wines made by the méthode champenoise. It is a blend made from Mauzac and a minimum of 30% of Chardonnay and Chenin Blanc, with a maximum limit of 20% on each of these two varieties. Well-known producers include Domaine de l´Aigle, Robert and Château de Villelongue. A second AC for sparkling wine is Blanquette de Limoux.
