Roussillon

Sub-appellation of C么tes du Roussillon-Villages#C么tes du Roussillon in the Roussillon region in southern France, named after the village of the same name. The full designation is C么tes du Roussillon-Villages Caramany. There is a special rule for the red wine in that at least 60% of the grapes, and all of the Carignan included (which may make up a maximum of 60% of the blend) must be fermented by means of carbonic maceration. The reason for this slightly unusual regulation is that the local wine cooperative in Caramany was the first producer in France to implement this technique in 1964.
