Regional appellation (also spelled Bourgogne Passetoutgrains) for rosé and red wines in Burgundy in France. The vineyard area totals around 1.250 hectares on chalky soils in the three deparements Côte d´Or, Rhône, Sâone-et-Loire und Yonne. Wines bearing this name have a long tradition. In the past, all the grapes growing in a particular vineyard were harvested at the same time, resulting in a so-called vineyard blend. That is also the basic meaning of the term Passe-Tout-Grain. The AC wines must consist of Pinot Noir, with a minimum of one third in the blend, plus Gamay. Generally speaking, the higher the Pinot Noir content, the better the wines. The rosé wines must be produced using the saignée method (Removing the must from the unpressed grapes after a short period of skin contact).
