Dear Ray,

at times in Germany (it shall surely be changed ..) it is not allowed to
chaptalize wines with Prädikat ( `titled´ wines ). That means beginning with
Kabinett, Spätlese, etc.
All other Q.b.A. (so called quality wines) are allowed to be chaptalized.
