Neusiedel Lake hills/Neusiedlersee-HügellandThe estate is located in the commune of Zagersdorf in the Burgenland in Austria. It was founded in the early 1990’s by Christine and Dipl.-Ing. Rolf Pretterebner. Their fundamental idea was to produce their own wines in harmony with nature. Initially, vineyards were leased in order to obtain experience. Today, the estate owns four hectares of vineyards in the best sites of the two wine-growing regions Neusiedlersee-Hügelland (Burgenland) and Thermenregion (Lower Austria). Some of the vineyards have vines more than 100 years old that have been revitalised. Mainly red varieties are planted, including Pinot Noir, Blaufränkisch, St. Laurent, Blauer Portugieser, Cabernet Sauvignon, Cabernet Franc, Merlot, Syrah, Lagrein and Marzemino, as well as small amounts of white varieties such as Chardonnay and Pinot Blanc. Organic vineyard practices are implemented. The rare swallowtail butterfly is the emblem and symbol of the estate, signaling the respect paid to the natural environment, the organic practices and the traditional, careful work in the cellar. The wines are made in the classical manner, i.e. with the traditional aim of retaining the character defined by the soil and the climate. Only the best grapes are picked. Fermentation takes place at a temperature of 28 to 32 °Celsius, using selected cultivated yeasts, usually following a trial fermentation. Towards the end of fermentation, malolacticfermentation is initiated by inoculating the wine with own cultures. The wines are racked and filled into barrels for maturation, and are inoculated with a special culture to initiate a third fermentation. This phase of maturation may take from one to three years. The wines are lightly filtered before bottling, with no pumps being used. The top-quality wines are marketed in the ranges „Reserve†(2 to 3 years barrel maturation) and „Große Reserve†(3 to 5 years barrel maturation). Spirits (grappa-style, wine-based, fruit-based) are also produced.
