The „Bioweingut Johannes Zillinger“ organic wine estate is located in the commune of Velm-Götzendorf in the southeast of the Weinviertel wine-growing region in Austria. The estate has a long tradition, and was founded in 1673 by David Zillinger, it is still owned by the same family. After many years of experimenting in the vineyards and conducting his own research, Johann Zillinger restructured the estate to organic-biological methods in 1985. The federal state of Lower Austria awarded him the environmental prize for this pioneering decision. In 2003, 2004 and 2005, the estate was declared to be the best organic wine producer in the world at the leading organic trade fair, the „BioFach“ held in Nürnberg in Germany. The business is currently run by Johannes Zillinger. The vineyard area totals 20 hectares, with holdings in the following sites: Haidthal, Kellerberg, Lissen and Sonnberg. 60% of the area is planted with the following white varieties: Grüner Veltliner, Pinot Blanc, Riesling, Welschriesling, Chardonnay, Traminer, Sauvignon Blanc and Muskateller, the remaining 40% is planted with the following red varieties: Zweigelt, St. Laurent, Blauburger and Cabernet Sauvignon. Experiments are under way with some fungus-resistant varieties. The white wines are fermented under temperature-controlled conditions and largely vinified in stainless steel tanks, they are kept on the lees for varying periods to retain fruit and typical varietal character. Only the ripest grapes of Grüner Veltliner, Pinot Blanc and Chardonnay are matured in large barrels of oak, acacia and ash. All the red wines are matured in large barrels for a minimum of six months. Some of the best red wines are matured in barriques of French and American oak, the focus here, too, is on terroir and varietal character. The premium wines include the Weinviertel DAC Kellerberg, Riesling Haidthal, Sauvignon Blanc Lissen, Gelber Muskateller Sonnberg and Zweigelt Classic. When vintage conditions permit, ice wine is also produced.
